DESCRIPTION:Although mezcal has been the next big thing since at least 2008\, even seasoned spirits professionals are still trying to wrap their heads around what exactly it is and why everyone is talking about it. When we hear the word “mezcal”\, we imagine a rustic\, handmade spirit. And much of it is that. But not all of it. That’s just one of the myths that we’ll dispel in this session\, presented by Golden Spirits Award-winner Lou Bank. In a series of eight neat pours\, the founder of SACRED will illustrate that mezcal can be made in an industrial way\, and that there’s a place in the market for that industrial spirit. He’ll illustrate what an artisanal mezcal is\, and what an ancestral mezcal is\, and how they are different. He’ll explain why the agave is a particularly unique sugar source for spirits\, and how the plant’s unique qualities also fuel debates among industry professionals as to what is and is not sustainable. \n\n\nLou Bank\n\nLou Bank has sold more copies of a single comic book than anyone else in America. He helped bring Pokemon to the masses\, Star Wars to the cereal aisle\, and Morimoto to the beer geeks. But you’re here because he founded SACRED\,  a USA-based\, 501c3 not-for-profit that uses traditional and artisanal agave spirits from rural Mexico to help improve the quality of life in the communities where those spirits are made. Lou is also the co-host of Agave Road Trip\, a podcast that helps gringo bartenders better understand agave\, agave spirts\, and rural Mexico.

This beautiful winery based in San Miniato between Florence and Pisa is a historical one; the villa built in 1400 has seen guests such as Napoleon Bonaparte\, has been the epicenter of Italian agri-culture as Cosimo Ridolfi was as well president of Accademia dei Georgofili (whose core is promoting sustainable agricultural practices). Participants will learn about moving the breath with the body\, understanding the healing benefits of the breath and be introduced to more breath practices to help destress and refocus. \n\n\nMila Marshall\n\nI am a native Chicagoan and love the outdoors. My life is filled with excitement as I am a mother of three very active quaranteens who def keep me on my toes. Life as a yoga and meditation instructor has been transformative. I show up in my classes charged with only teaching what I practice\, and that requires a lot of self truth. So with that I teach from the places that I know the best; trap yoga lets me flex my b-girl side\, Sex Flex allows me to tap into the divine feminine\, chair yoga and restorative gives me access to heal the hurts from life as a competitve swimmer and water polo player\, beach yoga allows me to love life in open air and partner yoga is a way for me to dissolve the untruths about what I feel I am owed by others…and meditation\, well it reminds me that the bells and whistles of being born in a Black body can be divine and distracting. I don’t claim to shape shift like the best of them but I am for sure clear that I am not like the rest of them. I truly believe the soul is here for its own joy and there is no liberation sweeter than that of one’s consciousness from the ego.

Now this social entrepreneur and multicultural hospitality influencer is also a community advocate\, and making her mark from behind the bar and beyond. \n\nCocktails\n  \nITALIAN SODA \nIngredients:\nBerries or stone fruit\nSugar or Monkfruit\nIce\nSoda or Seltzer \nDirections:\n1. Purée the fruit and separate the pulp\n2. Make a fruit syrup using the simple syrup method. (The simple syrup method- boil water add sugar. 1:1 ratio of 1 cup water to 1 cup sugar. Boil until sugar is completely dissolved.)\n3. Add 1 cup of fruit mixture to the simple syrup to create a fruit syrup.\n4. Fill glass with ice\n5. Add 1/3 fruit syrup\n6. Add soda or seltzer. \nWant to turn it up? Make it a cocktail by adding 1 1/2 – 2 ounces of your favorite spirit. Gin/ Vodka/Pisco/Light Rum/Sparking wine and reduce the amount of soda water or seltzer. \nNOTE: Please make the Purée Fruit Syrup before the event. \n \nCRANBERRY SHRUB (DRINKING VINEGAR) \nIngredients:\n1 12 oz. bag cranberries (fresh)\n1 cup sugar (for a healtier alternative\, try monkfruit sweetner instead of sugar)\n1 cup red wine vinegar \nDIRECTIONS: (PLEASE MAKE BEFORE THE EVENT)\nCombine all ingredients in a medium saucepan\, and bring to medium heat\, stirring occasionally. Let the berries cook down\, popping\, and breaking down until it thickens\, resembling jelly\, about 15-20 minutes. Remove from heat\, and strain through a fine mesh sieve. Participants will learn about moving the breath with the body\, understanding the healing benefits of the breath and be introduced to more breath practices to help destress and refocus. \n\n\nMila Marshall\n\nI am a native Chicagoan and love the outdoors. My life is filled with excitement as I am a mother of three very active quaranteens who def keep me on my toes. Life as a yoga and meditation instructor has been transformative. I show up in my classes charged with only teaching what I practice\, and that requires a lot of self truth. So with that I teach from the places that I know the best; trap yoga lets me flex my b-girl side\, Sex Flex allows me to tap into the divine feminine\, chair yoga and restorative gives me access to heal the hurts from life as a competitve swimmer and water polo player\, beach yoga allows me to love life in open air and partner yoga is a way for me to dissolve the untruths about what I feel I am owed by others…and meditation\, well it reminds me that the bells and whistles of being born in a Black body can be divine and distracting. I don’t claim to shape shift like the best of them but I am for sure clear that I am not like the rest of them. I truly believe the soul is here for its own joy and there is no liberation sweeter than that of one’s consciousness from the ego.

Set\naside. \nFor the Shrimp:\nSpice Mix:\n1 T of each: Chili powder\, Cumin\, Garlic Powder\, Smoked Sweet Paprika\n1/4 t of cayenne pepper\n1 t kosher salt or sea salt\n1 t fresh cracked pepper \nIn a small bowl mix all ingredients till combined. Pat the shrimp dry with paper towels. Toss the shrimp and the spice mix in a bowl and toss till coated. Heat a drizzle of oil a large skillet over medium high heat. Add the shrimp to the hot pan and sauté for 5-7 minutes\, flipping occasionally\, until the shrimp are cooked through. Place in bowl and cover until ready to assemble tacos. \nAssembly:\nBest heat up your tortillas on the stove top or grill. Start with tortilla of choice. Add 2-3 grilled shrimp then top with the Strawberry/Avocado/Sweet Potato Salsa. Finish with sprinkle of cotija cheese and spritz of lime. \nENJOY!!!
